Obviously Morgan isn’t as smart as he seems. The fries are pre-fried, frozen for however long, then fried again and salted while still hot. Frying removes water and replaces it with oil – did you ever see oil go moldy? McDonalds fries are thin so frying them twice removes a lot of water, if not all. Salt is a preservative and also removes water. The fries look the same because they are preserved by the salt, they don’t shrivel up because the water is replaced by oil which doesn’t evaporate and the mystery is solved.
By the way, I am in no way affiliated with McDonalds, I just love cooking and salt curing though I do that usually with meats, not with potatoes, but the same principles do apply.
