Well, if you paid attention in high school physics class, you might have learned why you see it in color. For those 15 seconds your peripheral vision is bombarded with certain wavelengths (colors) of light, and your mind adjusts to those wavelengths similarly to the way you would adjust to a certain intensity of light. You transition to perceiving a surface devoid of color so the colors you see are the complimentary colors of the colors seen during the initial 15 seconds because that’s the direction you adjusted in (like how bright light is brighter after coming from the dark). This image is further refined by two more factors: one is that your mind is likely to have a certain expectation for how this scene should appear, and another is that your peripheral vision frankly sucks compared to your focal vision (a 1 degree cone of vision which contains that little black dot and nothing else). Without the information gathered by scanning the image with that focal cone as you normally would, the rest of the image is largely imagined, leaving it open to the complimentary trick for more than an instant.
Who cares you might ask? Well I don’t really care whether you care or not, but I’m sure somebody does.
